Adopted an 11 month old Chihuahua on Saturday from the humane society. Have not seen her urinate other than once that day. She is eating, drinking, and pooping. Should we be concerned?

Hello, it sounds like Bella could have a urinary tract infection. Alternatively, she could have bladder stones. If you have shortened her walks, then perhaps she is not being allowed sufficient time to fully urinate.
If this persists, or if you note blood in the urine, frequent small urinations, or painful urinations, then she should be evaluated by her veterinarian.
Hope this helps and best of luck.
