Pet's info: Cat | Mixed Breed | Male | neutered | 7 months and 2 days old
My cat of 7 months old was hospitalized at the vet for 3 days and 2 nights with kidney levels BUN 208 CREA 10.7 and after 3 days his levels had gone down to BUN 13 and CREA 0.7.. we were able to bring him home and the doc even said to forgo the kidney diet for now and come back in 3 weeks. However, he has been drinking excessive amounts of water and peeing a lot since he's been home. Is this normal?

No this is not normal, however it will help hopefully to lower his BUN even further. If he keeps up the excessive drinking you may want to call your vet and see whether he wants to recheck Briggs earlier than four weeks from now. Do not deprive Briggs of fresh water. Let him drink all he wants for now.
