I think Jim may be enough so you're not overcrowding the cage for now. Birds, like people, can experience grief, so Jolly is likely missing her friend Joy. You are doing the right thing by keeping her company and giving her a little extra love an attention. If she doesn't perk up, or seems lonely, even with your other bird there, adding a new friend may be a consideration, but it may be best to give her some time first.

If she seems down, adding in a toy that she can snuggle against such as a soft nest or preening toy, or even adding in one of the little "fake" parakeets that sing may help her feel a bit more comfortable. Interacting together and offering her some favorite treats may also help. If she continues to act depressed, or shows any signs of illness, a vet checkup is always a good idea to rule out any health issues.

Unfortunately, lethargy/sleepiness is a very vague symptom that may just indicate she isn't feeling well, but not what is causing her to feel that way. A good step would be to bring her to the vet, especially if you note any other signs of illness such as changes in weight, acting listless even when you're not interacting with her, not eating or drinking, stool changes, etc. If she checks out healthy, or seems normal and healthy otherwise when you aren't trying to pet her, it could just be that Pidgey is getting more used to you, and is actually enjoying your touch enough to relax and rest around you. This can be a good sign of bonding! However, if she seems ill or you are concerned, a vet appointment in person is best.

Molting time is different for each individual bird, so yes, molting is possible if it is that time for Sheephony. You may see new feathers, called pin feathers, growing in to replace the old if this is the case (they look like little pins sticking out of the skin, hence the name). Other potential causes of feather loss can include nutritional issues, parasites on the skin, infections, illness, etc, so if she seems otherwise unhealthy or ill, or you aren't seeing new feathers growing in, scheduling an exam with your vet is best. In some cases, birds will also pluck feathers if bored or stressed, so adding some enrichment and making sure Sheephony is kept in an area with low stress may help as well.

These parrots don't like to be along, so either bird or human company. The problem with adding another bird, is not all birds get along and in a cage there is no escaping aggression. If you have a return policy and get the birds as a trial run, that could work. Also, new birds should be quarantined to limit transmission of infectious agents. Good luck.

It could be that your bird is cold or nervous, and moving her to a warmer, quieter location may help reduce stress and help her regulate her temperature. If she has other symptoms in addition to shivering, such as not wanting to eat or drink, changes in stool, sleeping all the time, etc, then this can indicate illness and should be checked out by a vet in person if she doesn't improve after a day or so.

Diarrhea can be caused by a wide number of things, so finding the underlying cause is important to treating it. While changing the diet may help, other issues such as parasites, illness, infection, etc, should be ruled out as well. As for diet, removing any extra treats such as fruits and veggies can help firm up stool if too many are being given (the higher water content can cause loose stool.) Feeding a diet specific to pigeons, either a commercial food or a variety of seeds and insects, can help ensure proper nutrition. If you have a bird that is very ill, separating him from any other birds you own can also help if there is a spreadable illness causing symptoms. If at home care doesn't help, then you will need to try and find a clinic in your area so your bird can be treated and any medication such as an antibiotic given to help Sheephony feel better.
