My gerbil won't stop drinking water. Could it be a health problem?

Polydipsia (increased drinking levels) can be caused by a variety of causes. Kidney problems (infections, failures), endocrine or metabolic dysfunctions (diabetes or electrolytes imbalances), persistent inappetence are all possible and must be ideally investigated starting with a blood test and urine analysis. If he will allow, check his teeth for overgrowth or misalignment. Also, look for obvious signs of infection or injury. This may include redness, swelling, bleeding, bruising or discharge. This usually isn't normal. He could have a urinary tract infection, diabetes or other type of problem. I would have your vet take a look at him. If your mouse drinks a lot of water, it will pee a lot. This could be caused by heat, but also by diseases like diabetes and kidney disease. Your veterinarian can do a blood test to check for these diseases and treat them if they are not too advanced.
