My puppy ate beef fat, now vomiting & lethargic. Should I worry?

I would be very concerned that Ruby has pancreatitis. This can be brought on by eating fatty foods, and it is fatal if it isn't treated. I would see if there is a low cost clinic in your area, or if you can find a vet who will take payment plans. She has to see a vet immediately.

Poor puppy. That looks like digested food that he vomited up. He may have eaten something that he shouldn't have. Therefore I would try to fast him for 12 hours and then offer him small amounts of boiled chicken and plain rice. If he is still vomiting, lethargic, or has lack of appetite and diarrhea, then I would be concerned he may have either intestinal parasites or has contracted the deadly parvovirus. It is best to have him seen by your local veterinarian if he is not getting better. Hopefully he just got into something he shouldn't have and will show improvement within the next 12 to 24 hours. It sounds like Princess is unwell. She could have a GI illness, may have eaten something rotten, a foreign body, or pancreatitis. I see that she is unspayed, and an infection of the uterus called a pyometra occurs in unspayed dogs and causes these symptoms. For now, I recommend monitoring her. Poor girl. Vomiting more than 1-2 times and lethargy are major concerns for an internal illness such as kidney disease, liver disease, pancreatitis or even a viral infection. It is imperative that you take Baby to your local vet for diagnostic testing to determine what her internal illness is so that we know how to best help her. Anything you give her by mouth will likely be vomited back up, so I would not recommend offering her anything but water and getting her to a vet asap. I would be extremely concerned they have pancreatitis, which can happen in dogs when they consume too much fat. Pancreatitis can be fatal and it's an extremely serious disease, you need to take them all into a vet immediately.
