How to train a stubborn 10-year-old cat when old methods fail?

Obtain a spray bottle and fill it with water. Whenever Salem jumps up onto the counter, lightly spritz him in the face and say "off!" to show that this is an unacceptable behavior. I've had some clients use noise deterrants before where a motion sensing noise device is placed on the counter and whenever the cat triggers the motion sensor, a loud noise goes off. If he is attacking you and not trying to play then he should be confined, you should always keep him up to date on Rabies, and you should discuss behavior modification drugs with your Vet, like prozac. I would get it in a liquid form you can put in his food. I would purchase feliway diffusers for around the house, one should go in his room. You can play with him but as soon as he gets over stimulated you need to stop and walk away. If he starts to get aggressive and is coming towards you squirt him with a water bottle. It is inappropriate behavior for a cat to attack you and injury you that badly. You need to strongly consider if this is the kind of relationship you want from a pet. Kittens can be challenging to manage when they're young! Scratching and biting at this age is normal play behavior, so it's up to us to be patient and provide lots of appropriate outlets for this behavior. Make sure that your kitten has a variety of different toys to play with - things like fishing-pole type toys to chase and pounce on, large plush toys to grab and kick, and smaller toys for chasing and batting around. If he tries to bite or scratch, just redirect him to one of his toys and use that to play with him instead. If you're petting him and he bites or scratches your hands, calmly stop petting and ignore him until he calms down. You may only be able to pet him when he's calm and sleepy at this age, which is okay - he will become calmer as he gets older. I don't normally recommend a spray bottle for training cats or kittens, as it often increases their frustration and isn't very effective at stopping problem behaviors. Instead, try redirecting him to something else. I would recommend using a spray bottle filled with water and lightly spritz Sassy in the face when she begins barking at BoBo while at the same time saying "no bark!" and see if this helps. You can also use an empty can filled with coins and throw it in Sassy's direction while saying the same thing in hopes that this will stop the behavior. I hope this helps! You can also use a product called NaturVet Quiet Moments calm treats plus melatonin for cats and see if this helps. If you are not having any success and they are still aggressive towards one another, I would recommend discussing this further with your veterinarian as anti-anxiety medications may be the next step.
