Is my collared dove's hunched back and dropped tail normal?

This can be normal behavior, especially during a moult or season change. If he's kept indoors, adding in a UV lamp on or near his enclosure and having it set to an on/off day/night cycle may help him perk up a little and remain more active in the winter months. However, it is very normal for birds to be less active as daylight shortens. If he does develop any signs of illness, such as refusing to eat, watery stools, completely listless and fluffed all the time, etc, then going forward with additional vet care is always best.

It sounds like yes, this is normal behavior for Lokkhu since she is otherwise acting fine. If you notice her having an inability to fly, perch or balance normally then I would be concerned. If she is behaving normally otherwise, then she is likely molting. Continue to monitor for lethargy, loss of appetite or loose droppings. Make sure she continues to eat and drink normally. Keep her as stress free as possible.

Some birds sleep with their head tucked under a wing or in some other similar position. Sky’s neck is bent more in the pictures than what is typical for a parakeet, but it could just be normal for him. However, if you notice any changes or if his neck doesn’t straighten out and remains bent when not sleeping, then this would definitely not be normal and should be evaluated by a veterinarian.

Max shouldn't be bleeding just from moving around, and if it happens repeatedly in the same spot, or doesn't stop bleeding, I'd be concerned. It is a good idea to have him checked out by a local vet to make sure there isn't an injury there such as a broken blood feather, an abscess under the skin that is opening up when jostled, or a wound on the skin from parasites, stress picking or other injury. If he is bleeding at home, you can use something such as a little cornstarch to stop the bleeding, and then gently clean the area with a warm washcloth to remove any dirt or debris so you can check for wounds.
