Came home and my cat is giving birth in of all places the cat litter. Luckily we had just changed it but not sure if we should move her, or the best way to go about this.

Given that Pippin is in the process of giving birth now, I would not move her until after she has given birth to all the kittens. You don't want to put any stress on her during this time period. Once all the kittens has been born and she has cleaned them and they have nursed at least once, then I would bring the box to Pippin and her kittens, put them in it, and then move them to a different spot.
