Blue Buffalo is a good quality dog food brand, as are Science Diet (I like the Ideal Balance line), Wellness, Royal Canin, Purina ProPlan, etc. The differences in Blue Buffalo and Purina Dog Chow can be found in the types of meats and byproducts used to make the food, the presence of fillers, and sourcing of ingredients. If Purina is the preferred brand, I tend to encourage pet owners to choose from the Purina ProPlan line rather than the basic Dog Chow.

Every dog is a little different and you may have to experiment a bit to find the food that Roscoe tolerates the best. Since Cash is a small dog, you might consider one of the more expensive options such as a dehydrated or fresh food diet. They are able to control their ingredients much more easily than a large manufacturing plant does that makes dry food. I have been very pleased with The Honest Kitchen ( https://www.thehonestkitchen.com/ ) and Just Food For Dogs ( https://www.justfoodfordogs.com/ ). Both have foods that will not have chicken and both have options without any poultry. You do not have to worry about the potential addition of chicken fat which a number of dry food companies do as well. If those are not good options for Cash, then you may consider a canned food which again will generally be safer than a dry food at making sure there isn't any chicken contamination. You are correct that it is very hard to find a low protein dog food. Most commercial dog foods are formulated to meet the needs of an average adult dog, so they tend to have a higher amount of protein. You can find some senior diets that have lower protein amounts, but a really low protein diet is generally only available in a prescription diet. Blue Buffalo has had some recalls, but generally tries to do a good job formulating a good food. My top senior diet recommendations are Wellness and Orijen, but Orijen is not low protein. Thank you for contacting Boop by Petco with your question about Blue. If you don't have enough to make a slow transition, you will have to make do with what you have and hope the new food doesn't upset his stomach. Mix the foods together tonight, and then give him the new food in the morning. As an aside, I do not recommend feeding Blue Wilderness. It is a terrible food, and it's one of the foods linked to causing dilated cardiomyopathy in dogs. The FDA is investigating that link. You would be hard pressed to find any vet who recommends Blue Buffalo, as it causes many other issues such as hemorrhagic gastroenteritis. I would feed him a much better brand such as Royal Canin, Hill's Science Diet, Purina Pro Plan, or Iams. I hope this helps!
