I have recently adopted a dog. He is a mixed breed-shepard. At 6 months he weighed 50 pounds and he is currently going on 8 months old. He’s still skinny and eats it quickly. is there a more suited food for him? And when should I transition him to adult food?

I brought my cat (4 YO black American short hair) to the vet a few months ago after she was scooting frequently and her glands were released. Our vet said she needed to be changed to a high fiber diet which we did immediately (Image attached below). This was in fact one of the ones the vet told us to buy. I JUST found a wet food that Snaccs will eat. (If fed by hand or really hungry)(Blue Basics) that he's had no reactions to. He does have a very sensitive tummy and dairy allergies so it was important to find something that suited him. However, my mom decided to buy "Lil Plates" dog food for him (as well as 2 cans of blue) hoping I'll give him a "tastier option". What is the best food to feed a 55-pound highly active hound? I was told to switch to grain free, but her stool has been mucous like and runny. I've tried Redford Naturals Limited Ingredient (I've tried chicken, beef, sweet potato) and American Journey Limited ingredient (lamb).
