Thank you for your question. Brutus Broth goes through an aseptic manufacturing process. The aseptic manufacturing process is the most effective way to safely process liquid while maintaining the nutritional value. Through the process the liquid is heated at extremely high temperatures for a few seconds. Since the temperature is so high the duration needed for sterilization is very short, unlike other processes such as canning which require high heat for long periods of time. The process of high heat at short periods is very effective in killing pathogens but maintaining the nutrients, minerals, flavor and color of the broth. Unfortunately, during this process the gelatinous properties of the broth are "liquified". We do not add additional gelatin but we do add glucosamine and chondroitin to help support dogs' hips and joints.
